Ingredients per 4 portions:
250 grams (2 cups) of flour
125 grams (1/2 cup) of butter
125 grams (1 ¼ cup) of sugar
1 whole egg
1 egg yolk
a pinch of salt
a bit of vanilla
lemon rind
1 cup of grappa (a brandy distilled from wine)

Place the flour and sugar on a pastry board. Add the whole egg and the egg yolk with a pinch of salt and a bit of vanilla.
Add the butter at room temperature and the grappa and knead the whole mixture. Spread the mixture in a short baking tray and brush the outside with the egg white. Cook in oven at 180°C (350°F) for about 40 minutes. Once cooked, wait until the cake has cooled before removing it from the pan.
